Healthy Banana Nut Oatmeal Bluberry Muffins

Quaker oats (not quick oats) - 1cup
Very ripe bananas, smashed - 2
Walnuts (chopped) (optional) - 1 cup
Skim Milk - 1cup
Brown sugar - ½ cup
Vanilla Extract - 1 tsp.
Egg - 1
Baking Soda – ½ tsp.
Salt - ½ tsp.
Cinnamon - 1 tsp.
Blueberries (frozen) - 1 cup

Soak the oats in the milk for one hour. Preheat the oven to 400 degrees. Spray muffin with nonstick spray. Combine the soaked oats Combine the soaked oats, banana, egg and vanilla extract.  In another bowl combine the whole wheat flower, brown sugar, baking powder ,baking soda,salt,cinnamon.Combine the dry and wet ingredients together and mix in the walnuts .Spoon into the prepared. Bake for 20 min. or until done.
