Rava Idly

Serving: 2

Ingredients:

Sooji Rava: 1 cup
Grated Carrot: 1/2
Chopped Coriander: 1/4 cup
Yogurt / curds: 3/4 cup
Salt
Baking Soda: 1/8 tsp
Cashew nut: 20
oil: 5tbs

Seasoning:

Mustered seeds: 1/4 tsp
Jeera / cumin seeds: 1/4tsp
Channa dal: 3/4 tsp
Urad dal: 3/4 tsp
Curry leaves: 1 stem

Method:

Dry roast Rava until it gets slight brown here and there.
Prepare seasoning in a pan adding 2 tbs oil and all seasoning ingredients, when Channa dal and urad dal gets slight brown add roasted rava and stir for few min, switch off the stove and let it cool completely.
add carrot, coriander, salt, baking soda and yogurt to rava, mix well if needed add some water until the batter gets regular idly batter consistency.

Grease idly plate with oil and put one cashew nut in each idly bowl then add batter and steam it for 10 - 12 min. after switching off the gas let it cool for 10 min, then idlies are ready to serve.
this Idly can be served with coconut chutney / potato saagu.

Kalakand

I learnt this sweet from my sister. this Kalakand is light brown n cream in color.

Serving: 10

Ingredients:

Mashed Paneer: 1cup
Milk Powder: 2 cup
Powdered sugar: 2 cup
Curd: 1/2tsp
Ghee: 2tsp

Method:
Mix all the ingredients except ghee. grease a oven safe bowl with ghee, put mixed ingredients into the bowl and close the bowl using aluminium foil. Preheat oven for 350 degree and bake for 35 min.

Note: Don't use non fat dry milk powder. Any Indian milk powder is good for this sweet.

Brinjal chutney

Serving: 4

Ingredients:

Brinjal: 1lb
Green chillies: 4
Roasted peanut powder: 4tbs
Roasted Til / sesame seed Powder: 4tbp
Fresh grated coconut: 3tbs
Onion: 1/2
tamarind: 1"
Oil: 2tsp

Seasoning:
Mustered seeds:1/2 tsp
Jeera: 1/2 tsp
Curry leaves: 6
Red Chillies: 2
oil: 2 tbs

Method:
Heat oil in a pan fry cut brinjal and cut onion, green chillies until it become tender, before switching of the stove add coconut and tamarind. let it cool for few min. Grind the mixture and add peanut and til powder.

In a pan Prepare seasoning adding mustered seeds, jeera to oil, let it splutter,
add curry leaves and red chillies.
Garnish chutney with seasoning.



Ridge guard / Heerekai / Beerkai chutney

Serving: 4

Ingredients:

Ridge guard: 1 lb
Green chillies: 4
Roasted peanut powder: 4tbs
Roasted Til / sesame seed Powder: 4tbp
Fresh grated coconut: 3tbs
tamarind: 1"
Oil: 2tsp

Seasoning:
Mustered seeds:1/2 tsp
Jeera: 1/2 tsp
Curry leaves: 6
Red Chillies: 2
Oil: 2 tbs


Method:
Heat oil in a pan fry cut Ridge guard and green chillies until it become tender, before switching of the stove add coconut and tamarind. let it cool for few min. Grind the mixture and add peanut and til powder.

In a pan Prepare seasoning adding mustered seeds, jeera to oil, let it splutter,
add curry leaves and red chillies.
Garnish chutney with seasoning.

Red Capsicum chutney

Serving: 2

Ingredients:

Red Capsicum: 1
Garlic: 2
Red chillies: 2
Tamarind paste: 1/2 tsp
Salt: according to taste
oil: 2tsp

Method:
Fry all ingredients with 2tsp oil and grind it.

This chutney can be served with Rice / Chapati.

Spinach / Palak chutney

Serving: 4

Ingredients:

Spinach: 1 bunch
Green chillies: 3
Daniya / coriander seeds: 1tsp
Jeera: 1/2tsp
Garlic: 2 clove
Roasted Til / seseame seeds: 4tsp
Tamarind paste: 1tsp

Seasoning:

Mustered seeds:1/2 tsp
Jeera: 1/2 tsp
Curry leaves: 6
Red Chillies: 2
oil: 2 tbs

Method:
Fry all the ingredients with little oil separately and grind it.
In a pan Prepare seasoning adding mustered seeds, jeera to oil, let it splutter,
add curry leaves and red chillies.
Garnish chutney with seasoning.

This chutney can be served with Rice / Chapati / Parata.




Tomato Chutney

Serving: 4

Ingredients:

Tomato: 2
Garlic: 2 clove
Daniya / coriander seeds: 1tsp
Jeera / Cumin seeds: 3/4tsp
Red chillies: 4
Roasted peanut: 5tsp
oil: 2tsp

Seasoning:
Mustered seeds:1/2 tsp
Jeera: 1/2 tsp
Curry leaves: 6
Red Chillies: 2
oil: 2 tbs

Method:

add curry leaves and red chillies.
