Open Dosa Powder


Ingredients:

Toor Dal - 1/2 cup
Urad Dal - 1/2 cup
Chana Dal - 1/2 cup
Jeera - 2tsp
Daniya - 3 tsp
Red Chili - 10
Salt - 1/2 tsp

Method:
  Dry roast all ingredients without oil separately and let it cool for an hour.  Make powder using a blender.

Sprinkle powder on roasted Dosa and serve hot with Chutney.

Curry Leaves Powder

Dry Curry Leaves -1 cup
Grated dry coconut - 1/2 cup
red chillies - 1/2 cup
Jagary - 1tsp
Tamarind - 1'
Oil - 2tsp
Salt to taste

Method:
Fry Curry Leaves and red chilies with little oil and coconut dry fry for few min (until it becomes little brown)
Add all ingredients and make powder.

Curry Leaves Powder is very tasty with Rice /Talipattu.

Note: wash Curry Leaves then dry in sun for one or two days....

Gurellu / Niger / Nyjer Powder


Ingredients:
Gurellu / Niger / Nyjer - 1cup
Garlic - 4
Red chillies - 5
Oil - 1/2tsp
Salt to taste

Method:
Dry Fry Gurellu / Niger / Nyjer for 4 to 5 min, when it starts spluttering turn off the flame.
Fry Red Chili with little oil.
Powder red chili, garlic and salt then add Gurellu / Niger / Nyjer and make powder.

Gurellu / Niger / Nyjer Powder can be served with Rice / Chapathi and can be used for some curries.

Dal Chutney Powder

Ingredients:
Chana Dal- 1cup
Urad Dal - 3/4cup
Red chilies - 8
Coconut Powder / Peanut - 1/4cup
Daniya - 2tsp
Jeera - 2tsp
Curry Leaves - 1stick
Asifotida - 1pinch
Jagary - 2tsp
Oil - 2tbs
Salt to taste

Seasoning:
Mustard seeds:1/2 tsp
Cumin / Jeera - 1/2 tsp
Curry leaves: 6
Asifotida according to taste
Oil: 2 tbs


Method:
Dry fry Chana Dal, urad dal and Coconut Powder / Peanut and make powder(coarse).
Fry daniya, jeera, curry leaves, tamarind with little oil. make powder with salt.
Prepare seasoning with seasoning ingredients and add both powder and fry for 3 to 4 min then mix in mixer.

Chatney Powder / Roasted Chana Powder / Pudi Chutney

Ingredients:
Roasted Chana - 1cup

Coconut Powder - 3/4cup
Jagary - 1/2tsp
Tamarind - 1'
Red Chili - 5
Salt to taste

Seasoning:
Mustard seeds:1/2 tsp
Cumin / Jeera - 1/2 tsp
Curry leaves: 6
Red Chili - 2
Oil: 1 tbs

Method:
Dry fry red Chili, when chilies gets cool powder with tamarind, jagary, salt, now add roasted chana and coconut and make powder.

Prepare seasoning with seasoning ingredients and add powder and fry for 3 to 4 min.

Serve Chatney Powder / Roasted Chana Powder / Pudi Chutney with Upma /Rice.
This Powder can be for months..

Peanut Powder

Ingredients:

Roasted Peanut - 1cup
Garlic - 4
Daniya - 1/2tsp
Jeera - 1/2tsp
Red chillies - 5
Salt to taste

Method:

Powder daniya and jeera first then add remaining ingredients and make powder.

Ridge gourd / Heerekai skin powder

Ingredients:

Dry Ridge gourd skin -1 cup
Grated dry coconut - 1/2 cup
red chillies - 1/2 cup
Sesame seed / Til - 3tsp
Garlic - 4
Tamarind - 1'
Oil - 2tsp
Salt to taste

Method:
Fry all the above ingredients with little oil separately for few min (until it becomes little brown)

make paste of garlic and salt add all other ingredients and make powder.

Ridge gourd skin Powder is very tasty with Rice /Talipattu.

Note: Peel Ridge gourd skin and wash it then dry in sun for one or two days....

Garlic powder

Ingredients:

Grated Dry Coconut powder - 1/2 cup
Garlic - 4
Jeera - 1tsp
Red chilies - 8
Salt to taste

Method:
Dry fry red chili for few min when it gets cool mix with garlic, jeera, salt make powder then add coconut and make powder.

Serve this powder with rice / chapathi and add little ghee.

Pudina / Mint Powder


Ingredients:

Dry Pudina -1 cup
Grated dry coconut - 1/2 cup
red chillies - 1/2 cup
Sesame seed / Til - 3tsp
Garlic - 4
Tamarind - 1'
Oil - 2tsp
Salt to taste

Method:
Fry all the above ingredients with little oil separately for few min (until it becomes little brown)

make paste of garlic and salt add all other ingredients and make powder.
