Bas Saaru/ Uralikalu /Ulavalu / Horse grain

Ingredients:

Uralikalu /Ulavalu / Horse grain - 1cup
Onion chopped - 1 and 1/2 cup
Garlic - 10
Red chili powder - 2tsp
Tomato - 1 medium size
Tamarind - 1 lime size
Grated coconut - 3tbs
Sambar powder - 1tsp
Turmeric powder - 2 pinch
Daniya Jeera powder - 1tsp
Chopped Drum stick leave/Methi - 1bunch(Optional)
Chopped coriander - 2tbs

Seasoning:
Mustard seeds:1 tsp
Cumin / Jeera - 1tsp
Urad Dal - 1tsp
Curry leaves: 10
Oil: 4 tbs
Red Chili - 2

Method:
Soak Horse grain for 8 to 10 hours. We can follow our own method to sprout these grain either in cloth or in stainless steel colander.  I make my sprouts using colander, keep soaked grain in colander and cover it with a lid and leave it for 10 to 12 hours.  Container can be place in oven.  We get nice long sprouts during summer.

We can also make this recipe without sprouts just by soaking Horse grain

Pressure cook Horse grain with 3 cups of water for 10 minutes or 1 whistle.  When its cool down separate water and horse grain.

Dry curry:
Make seasoning with Oil - 2tsp, mustard seeds 1/2 tsp, Cumin 1/2 tsp, Urad Dal - 1tsp, Curry leaves and red chilis.  When mustard seeds start spluttering add Onion and chopped garlic, when onion gets soft add Drum stick leaves/Methi(Optional), horse grain, turmeric, chili powder 1tsp, grated coconut 2tbs, daniyajeera powder and salt to taste, mix well and close lid and cook for 5 minutes.  

Rasam/Saaru:
Saute chopped onion 1/2 cup, garlic 2 with 1tsp oil, keep it aside and let it cool.  In a small bowl boil tomato and tamarind with 1 cup of water, when tomato gets soft turn of flame and let it cool for few minutes.  take a blender jar and add cooked onion garlic, tomato tamarind, Sambar powder, coconut tbs, chili powder and some water.  make it into paste and keep it aside.
Prepare seasoning with Oil - 2tsp, mustard seeds 1/2 tsp, Cumin 1/2 tsp, Curry leaves,  When mustard seeds start spluttering add ground paste, filtered horse grain water, salt to taste, 1 cup of water if it's too thick and let it boil for 5 to 10 minutes, turn off flame and garnish with coriander

Serve hot with rice or Ragi Or Jowar Mudde/Sangati

Sorekai /Sorakaya Sambar

Ingredients:
Toor Dal - 1/2cup
Chopped Sorekai - 1cup
Chopped Onion - 2tbs
Chopped tomato - 1tbs
Sambar Powder - 1tsp
Red Chili Powder - 1/2tsp
Turmaric Powder - 1/4tsp
Tamarind Paste - 1tsp
Coconut - 2tsp
water - 3 cup
Chopped coriander - 1tsp

Seasoning:
Mustard seeds - 1 tsp
Jerra - 1tsp
Red chillies - 2
curry leaves - 6
Asafoetida - 1/4 pinch
Oil - 1tsp

Method:Wash and pressure cook toor dal.
Prepare seasoning with mustard seeds, jeera, red chilies, curry leaves, Asifotida and add onion, when onion gets soft add Sorekai, salt, sambar powder, Red Chili Powder, Turmaric Powder, water and cook until Sorekai gets soft now add Tomato, tamarind paste and cooked dal. Add water if required.
Garnish with Chopped coriander and coconut.

Serve hot with Rice / Chapathi.

Cucumber Sambar

Ingredients:
Toor Dal - 1/2cup
Chopped Cucumber - 1cup
Chopped Onion - 2tbs
Chopped tomato - 1tbs
Sambar Powder - 1tsp
Red Chili Powder - 1/2tsp
Turmaric Powder - 1/4tsp
Tamarind Paste - 1tsp
Coconut - 2tsp
water - 3 cup
Chopped coriander - 1tsp

Seasoning:
Mustard seeds - 1 tsp
Jerra - 1tsp
Red chillies - 2
curry leaves - 6
Asafoetida - 1/4 pinch
Oil - 1tsp

Method:Wash and pressure cook toor dal.
Prepare seasoning with mustard seeds, jeera, red chilies, curry leaves, Asifotida and add onion, when onion gets soft add Cucumber, salt, sambar powder, Red Chili Powder, Turmaric Powder, water and cook until Cucumber  gets soft now add Tomato, tamarind paste and cooked dal. Add water if required.
Garnish with Chopped coriander and coconut.

Serve hot with Rice / Chapathi.

Radish / Moolangi Sambar

Ingredients:
Toor Dal - 1/2cup
Chopped Radish / Moolangi - 1cup
Chopped Onion - 2tbs
Chopped tomato - 1tbs
Sambar Powder - 1tsp
Red Chili Powder - 1/2tsp
Turmaric Powder - 1/4tsp
Tamarind Paste - 1tsp
Coconut - 2tsp
water - 3 cup
Chopped coriander - 1tsp

Seasoning:
Mustard seeds - 1 tsp
Jerra - 1tsp
Red chillies - 2
curry leaves - 6
Asafoetida - 1/4 pinch
Oil - 1tsp

Method:Wash and pressure cook toor dal.
Prepare seasoning with mustard seeds, jeera, red chilies, curry leaves, Asifotida and add onion, when it gets soft add Radish / Moolangi, salt, sambar powder, Red Chili Powder, Turmaric Powder, water and cook until radish / moolangi gets soft now add Tomato, tamarind paste and cooked dal. Add water if required.
Garnish with Chopped coriander and coconut.

Serve hot with Rice / Chapathi.

Moolangi / Radish Majjige Saaru/ Pulusu



Ingredients:
Moolangi / Radish Pieces - 1cup
Green Chili -2
Garlic - 2
Curd / Yogurt - 1 cup
Jeera -1/2tsp
Mustard seeds - 1 pinch
Fresh grated Coconut - 1tbs
Roasted Chana - 1tsp
Curry leaves - 4
Chopped Coriander leaves - 2tbs

Seasoning:
Mustard seeds:1/2 tsp
Cumin / Jeera: 1/2 tsp
Curry leaves: 6
Ghee - 1tsp

Method:
Prepare seasoning with ghee, mustard seeds, jeera, curry leaves.
Press Moolangi / Radish using chapathi roller / any heavy stone. Apply Salt and keep it aside for 5 to 10 min.

Burn green chili and garlic directly on flame(for light smokey flavor) then grind chili, garlic, Jeera, Curry leaves, Mustard seeds, Fresh grated Coconut, Roasted Chana with few spoon water then add curd / yogurt and grind it again. Add Salt if required.

Garnish with coriander and seasoning.

Serve with Brown / White Rice / Jowar mudde / Sangati.

Idli Sambar

Serving -3

Ingredients:
Toor Dal - 1/2 cup
Moong Dal - 1tbs
Onion - 1
Tomato -1
Chopped Green Beans - 1/2 cup
Chopped Carrot - 1/2 cup
Chopped Potato - 1/2 cup
Sambar Powder -1tsp
Turmeric Powder - 1/4tsp
Daniya - 1tsp
Ginger - 1'
Garlic - 3
Tamarind Paste - 2tbs
Red Chili Powder - 1/2tsp
Fresh Coconut - 2tbs
Oil - 1tbs
Chopped Coriander - 2tbs

Seasoning:
Mustard seeds:1/2 tsp
Cumin / Jeera: 1/2 tsp
Curry leaves: 6
Asifotida - 1 pinch
Oil - 1tbp

Method:
Pressure cook toor dal, moong dal, green beans, carrot, potato together.
Shallow fry daniya, 1/2 onion, ginger, garlic with little oil separately.
Grind daniya, onion, ginger, garlic, with coconut, sambar powder, turmeric powder, tamarind, red chili powder using little water.
Prepare seasoning add chopped onion, when onion gets soft add ground masala and fry for few min. now add cooked dal with vegetables, chopped tomato, salt and water as required. Boil for few min.
Garnish with Coriander
Serve hot with Idli

Fresh Coyote squash / Bottle gourd Majjige Saaru / Pulsu


Ingredients:
Chopped Coyote squash / Bottle guard - 1cup
Green Chili -2
Garlic - 2
Curd / Yogurt - 1 cup
Jeera -1/2tsp
Mustard seeds - 1 pinch
Fresh grated Coconut - 1tbs
Roasted Chana - 1tsp
Curry leaves - 4
Chopped Coriander leaves - 2tbs

Seasoning:
Mustard seeds:1/2 tsp
Cumin / Jeera: 1/2 tsp
Curry leaves: 6
Ghee - 1tsp

Method:
Prepare seasoning with ghee, mustard seeds, jeera, curry leaves. When mustard seeds starts spluttering add chopped Coyote squash / Bottle guard and 1 cup water, salt and cook until Coyote squash / Bottle guard gets soft, turn off the flame and let it cool.

Burn green chili and garlic directly on flame(for light smokey flavor) then grind chili, garlic, Jeera, Curry leaves, Mustard seeds, Fresh grated Coconut, Roasted Chana with few spoon water then add curd / yogurt and grind it again. Add Salt if required.

Garnish with coriander.

Coyote squash is known as seemebadnekai / seemvankai.
Bottole gourd is also known as sorekai / sorakaya.

Peppar Rasam

Ingredients:

Pepper Powder - 1 and 1/2 tsp
Jeera Powder - 1 and 1/2 tsp
Daniya Powder - 1/2tsp
Tamarind Paste - 2tsp
Jagary -1tsp
Garlic - 5
Chopped Tomato - 2tbs
Chopped Coriander - 2tbs

Seasoning:
Mustard seeds - 1tsp
Cumin / Jeera - 1 tsp
Urad Dal - 1tsp
Curry leaves: 6
Red Chili - 2
Asifotida according to taste
Oil: 2 tbs

Method:

Prepare Seasoning, when mustard seed stops sputtering add garlic and after a min add all the powder and fry until u get nice aroma then add 2 cup water, tamarind paste, jagary, tomato and boil for few min.

Garnish with Coriander.

Serve hot with Rice

Lemon Rasam

Ingredients:

Toor Dal - 1/2cup
Chopped Beans /Cabbage - 1/2cup
Turmeric Powder -1/4tsp
Garlic - 6
Lemon Juice - 2tbs
Chopped coriander - 1tbs
Grated Coconut - 1tbs
Salt to taste

Seasoning:
Mustard seeds -1/2 tsp
Jeera -1/2 tsp
Curry leaves - 6
Green Chili - 2
Oil: 2 tb

Method:

Pressure cook Dal and beans / cabbage with 2 cup water. when it gets cool mash lightly.

Prepare seasoning, when mustard seed stops spluttering add chopped garlic, when garlic turns slight brown add Dal, turmeric powder and salt and lemon juice. let it boil for few min.

Garnish with chopped coriander.

Serve hot with Rice.

Spinach Dal Rasam

Ingredients:

Spinach - 1 bunch
Toor Dal - 1/2cup
Green Chili - 2
Turmeric Powder -1/4tsp
Garlic - 6
Lemon Juice - 2tsp

Seasoning:
Mustard seeds -1/2 tsp
Jeera -1/2 tsp
Curry leaves - 6
Red Chili - 2
Oil: 2 tb

Method:

Pressure cook Dal, green chili and and chopped Spinach with 2 cup water. when it gets cool Grind Dal and spinach with 1 cup water.

Prepare seasoning, when mustard seed stops spluttering add chopped garlic, when garlic turns slight brown add spinach Dal puree, turmeric powder, lemon juice and salt let it boil for few min.

Serve hot with Rice.

Tomato Rasam - 2

Ingredients:

Tomato - 2
Toor Dal - 1/2cup
Rasam Powder - 1tsp
Turmeric Powder -1/4tsp
Red Chili Powder - 1/4tsp
Garlic - 6
Chopped coriander - tbs

Seasoning:
Mustard seeds -1/2 tsp
Jeera -1/2 tsp
Curry leaves - 6
Red Chili - 2
Oil: 2 tb

Method:

Moong Dal Sambar / Baby Carrot Sambar for Pongal

Ingredients:

Moong Dal / Hesaru Bele / Pesaru Pappu - 3/4cup
Chopped Onion - 1/2
Chopped tomato - 1tbs
Chopped Baby Carrot - 1/2 cup
Chopped Potato - 1/2 cup
Turmaric Powder - 1/4tsp
water - 3 cup
Chopped coriander - 1tsp

For Masala:

Daniya - 2tsp
Red Chili - 5
Toor Dal - 2tsp
Chana Dal - 2tsp
Methi Seeds - 1tsp

Seasoning:

Mustard seeds - 1 tsp
Jerra - 1tsp
Red chillies - 2
curry leaves - 6
Asafoetida - 1/4 pinch
Oil - 1tsp

Method:
Wash and pressure cook Moong dal with 2 cup water.

Dry Fry all masala Ingredients and make powder.

Prepare seasoning with mustard seeds, jeera, red chilies, curry leaves, Asifotida and add onion, when it gets soft add Tomato, Baby Carrots, Potatoes, salt.

Now add mixture of cooked dal and ground masala and cook for a while, add water if required.
Garnish with Chopped coriander.

Serve hot with Rice/ Wheat Pongal.

Jeera Gojju

Ingredients:

Tamarind paste - 2tsp
Asafoetida - 1/4 pinch
Chili powder - 1/2 tsp
water - 1/4 cup
Chopped coriander - 1tsp
Jeera - 1tbs
Urad Dal - 1tsp
Coconut - 1tsp
Roasted Chana Powder - 1tsp
Oil - 1tsp

Seasoning

Mustard seeds - 1 tsp
Jerra - 1tsp
Red chillies - 2
curry leaves - 6

Method:

Dry roast Jeera and urad dal, and make powder.
Prepare seasoning with mustard seeds, jeera, red chilies, curry leaves, Asifotida. when mustard seeds starts spluttering add tamarind water, salt, chili powder, ground powder, coconut powder, roasted chana powder. when the water starts boiling turn off the flame.
Garnish with Chopped coriander.

Serve hot with rice.

Radish / Moolangi Gojju

Ingredients:

Mustered seeds - 1 tsp
Jerra - 1tsp
curry leaves - 6
Chopped Onion - 1/2
Chopped Green Chili - 1/2tsp
Grated Radish - 1cup
Tamarind paste - 2tsp
Asafoetida - 1/4 pinch
Chili powder - 1/2 tsp
water - 1/4 cup
Chopped coriander - 1tsp
Oil - 1tsp

Method:
Prepare seasoning with mustered seeds, jeera, curry leaves, Asifotida. when Mustered seed starts spluttering add onion, green chili when it gets soft add radish and fry for few min. then add water tamarind water, salt, chili powder . when the water starts boiling turn off the flame.
Garnish with Chopped coriander.

Serve hot with rice.

Peanut Sambar


Ingredients:

Toor Dal - 1/2cup
Fresh / Dry Peanut - 1/2cup
Chopped Onion - 1/2
Chopped tomato - 1tbs
Sambar Powder - 1tsp
Red Chili Powder - 1/2tsp
Turmaric Powder - 1/4tsp
Tamarind Paste - 1tsp
Coconut - 2tsp
Poppy seeds - 1/2tsp
water - 3 cup
Chopped coriander - 1tsp

Seasoning:

Mustard seeds - 1 tsp
Jerra - 1tsp
Red chillies - 2
curry leaves - 6
Asafoetida - 1/4 pinch
Oil - 1tsp

Method:Wash and pressure cook toor dal and peanut with 2 cup water.
Grind Sambar Powder, Red Chili Powder, Turmaric Powder, Tamarind Paste, Coconut, Poppy seeds with little water and keep it aside.
Prepare seasoning with mustard seeds, jeera, red chilies, curry leaves, Asifotida and add onion, when it gets soft add Tomato, salt and ground masala and cook for a while.
Now add mixture of cooked dal and peanut add water if required.
Garnish with Chopped coriander.

Serve hot with Rice / Chapathi.

Tomato Rasam 1

Ingredients:

Tomato - 2
Rasam Powder - 1tsp
Turmeric Powder -1/4tsp
Red Chili Powder - 1/4tsp
Garlic - 6
Roasted Chana Powder - 1/2tsp
Grated coconut - 1tbs
Chopped coriander - tbs

Seasoning:
Mustard seeds -1/2 tsp
Jeera -1/2 tsp
Curry leaves - 6
Red Chili - 2
Oil: 2 tb

Method:

Boil whole Tomato with 2 cup water, when if gets soft turn off flame. when it gets cool take out skin. Grind tomato with 1 cup water.

Prepare seasoning, when mustard seed stops spluttering add chopped garlic, when garlic turns slight brown add tomato puree, chili powder, rasam powder, turmeric powder, salt, roasted chana powder, let it boil for few min.

Garnish with grated coconut, chopped coriander.

Serve hot with Rice / Upma.

Moong Dal with Beans


Ingredients:

Mustard seeds - 1 tsp
Jerra - 1tsp
Red chillies - 2
curry leaves - 6
Moong Dal - 1cup
Chopped Green beans - 1 cup
Chopped Garlic - 1tbs
Chopped Onion - 1/2
Chopped tomato - 1tbs
Asafoetida - 1/4 pinch
Green chilies - 2
water - 3 cup
Chopped coriander - 1tsp
Oil - 2tsp

Method:Wash and cook moong dal with 2 cup water. When dal is half cooked add chopped green beans add more water if required and cook for 10 to 15 min
Prepare seasoning in a cooking pan with oil, mustard seeds, jeera, red chilies. when mustard seeds stops sputtering add Green chilies, curry leaves, Asifotida and add onion, garlic.  when Onion gets soft add Tomato and cook for 5 minute.
Add seasoning to the cooked Moong Dal and mix well.
Garnish with Chopped coriander.

Serve hot with Rice / Chapathi.

Egg pulusu / Egg tamarind curry

Ingredients:

Mustered seeds - 1 tsp
Jerra - 1tsp
Red chillies - 2
curry leaves - 6
Boiled egg - 3
Chopped Onion - 1/2
Chopped tomato - 1tbs
Tamarind paste - 2tsp
Methi seed - 2tsp
Daniya Jeera powder - 1/2tsp
Asafoetida - 1/4 pinch
Chili powder - 1/2 tsp
water - 1 cup
Chopped coriander - 1tsp
Oil - 1tsp

Method:
Prepare seasoning with mustered seeds, jeera, red chilies, curry leaves, Asifotida and methi seeds, when methi seeds become light brown add onion, when it gets soft add Egg and fry for few min. then add tamarind water, salt, chili powder, Daniya jeera powder, Tomato. when the water starts boiling turn off the flame.
Garnish with Chopped coriander.

Serve hot with Rice / Chapathi.

Menthe gojju / Methi seed gojju

Ingredients:

Mustered seeds - 1 tsp
Jerra - 1tsp
Red chillies - 2
curry leaves - 6
Chopped Onion - 1/2
Tamarind paste - 2tsp
Methi seed - 2tsp
Asafoetida - 1/4 pinch
Chili powder - 1/2 tsp
water - 1/4 cup
Chopped coriander - 1tsp
Oil - 1tsp

Method:
Prepare seasoning with mustered seeds, jeera, red chilies, curry leaves, Asifotida and methi seeds, when methi seeds become light brown add onion, when it gets soft add tamarind water, salt, chili powder .when the water starts boiling turn off the flame.
Garnish with Chopped coriander.

Serve hot with rice.

Onion Gojju

Ingredients:

Mustered seeds - 1 tsp
Jerra - 1tsp
Red chillies - 2
curry leaves - 6
Chopped Onion - 1/2
Tamarind paste - 2tsp
Roasted chana powder - 1tsp
Asafoetida - 1/4 pinch
Sambar powder- 1tsp
water - 1 cup
Chopped coriander - 1tsp

Method:
In a cup take half a cup water add tamarind paste, roasted chana powder, sambar powder, salt mix well. keep it aside.
Prepare seasoning with mustered seeds, jeera, red chilies, curry leaves, Asifotida. Add onion when it gets soft add tamarind mix water. when the water starts boiling turn off the flame.
Garnish with Chopped coriander.

Serve with Pongal.
