Vangibath Powder / Huli Powder

Ingredients:


Chanadal—1 cup
Urad dal-3/4 cup
Daniya – 2 cup
Red chilies – 20
Cinnamon -4 inch
Moggu – 3(if they are around 2 inch each)

 Moggu is also know as Marati Moddu,  few pictures of Moggu,
  

Method:
   Dry roast all the ingredients separately with out oil until it starts leaving nice aroma.  when it gets cool make powder. 
 
 Vangibath Powder / Huli Powder  can be used for making  Vegetable  rice and also for Huli/ Sambar.

Gestational diabetes Snack / Lunch /Dinner Ideas


Some snack idea which has protein.
Few Snack / Breakfast idea for US residents,

  1. Atkins milkshake which has 2 gm of carb / serving which is a very good source of protein, with this shake some Indian snack.
  2. Almond Breeze milk 40 Calories has 3 gm of carb / serving,  Almond milk with Kashi golean cereal through which we get enough protein and fiber.
  3. Almond Breeze milk can be used for protein shake.
  4. Almond breeze can be used for preparing oat mean cereal. 
  5. Peanut butter sandwich using Oroweat Bread which has less carb in each slice so that we can eat 2 slice of bread.  Instead of sugar free jam/jelly use fresh fruits like grapes, blueberries, Kiwi slice, strawberry slice.  
  6. Barilla plus pasta is very good source of fiber, protein and carb.
  7. Cracked which is available in Winco foods, which has less carb compare to Indian Cracked wheat.
  8. Adams peanut butter has no sugar in it. 
  9. Southbeach bar is a good combination of protein, fiber and carbs and it tastes good compare to all other bars.
  10. Yogurt, make sure the sugar in it is natural sweet from fruit.  
  11. Guacamole with Chips.  which is very healthy and yummy.
  12. Salt boiled  Edamame in pods, which is available in most of the grocery shops. 
  13. Half  whole grain bagel with cheese.  
  14. Avocado Milk shake using Almond breeze milk.
  15. Carrot Milkshake using Almond breeze milk.
  16. Cheese stick.
  17. Egg fry
  18. Protein Powder is one of my favorite as a Mid night snack. 
  19. Wheat Quesadillas
  20. Oatmeal Pancake. 
  21. Carrot/Cucumber with Peanut Butter / Cheese dip.
  22. 1/2 Bagel with omelet.
  23. Quinoa Upma
  24. Minestrone Soup with multigrain bread.
  25. Guacamole Veggie Burger using Morningstar Patty.  (For Lunch/ Dinner)
  26. For working women Amy's Meal Box are a very good choice as most of the product has perfect combination of Carbohydrates, Protein and fiber.  The..se are available in most of the regular grocery stores like Walmart, Raley's, smiths, Trader's Joe and Safeway etc...
  27. For working women Deep Tiffin are a very good choice as most of the product has perfect combination of Carbohydrates, Protein and fiber.  These are available in most of the Indian stores.


Some other Snacks/ Breakfast:

  1. Cottage cheese with fresh fruit or salad.
  2. Salted nuts / regular nuts.  Peanuts, sunflower seeds and Almond, soy nut are very low in carb compare to other nuts.
  3. Cheese Sandwich.  
  4. Paneer Snack (Paneer Pakoda, Paneer tikka, Paneer Manchurian)
  5. Egg Snack like Egg Bajji, Egg soup.
  6. Sprouts salad,
  7. Egg roll.  
  8. Peanut masala. 
  9. Egg Dosa with Peanut chutney 
  10. French Toast, preferably whole wheat/ Multi grain bread 
  11. Wheat Pongal (measure the quantity before eating)
  12. Wheat Dosa with Peanut Chutney
  13. Cucumber Parata
  14. Omelet Dosa with Peanut chutney  
  15. Omelet Chapathi 
  16. Saffola instant oats,  each sachets contains 30gm of carbohydrates in it.  Which is a good source of fiber and protein.

Tips:

  1. Adding Fiber and Protein(which doesn't have any flavor and taste, which is available in Winco Foods) to wheat flour helps to digest slowly.  Fiber powder is available in Costco and in Winco called flax seed powder.
  2. Adding Soy bean seeds to idli and Dosa.  Soak handful soybean while soaking for idli and Dosa.
  3. Shifting to brown rice.  brown rice digest very slowly and we can't eat brown rice more compare to white rice.   Myth:  cooking rice outside not in pressure cooker and draining the excess water will remove some carbs from the rice.
  4. Adding fat will slows the digestion and it fills with less food.
  5. Quinoa is a grain which is equal to brown rice and taste better than brown rice.   Quinoa can be used to replace rice.
  6. Paneer is a good source of protein and it has very less carbohydrate in it.




Foods to be avoided:
Starchy food mostly whites..... like white rice, white bread, white Pasta, Potato, corn, Sweets.

Too much Methi seeds are also not good during pregnancy.

Stuffed Thondekai / Dhondakai / Tindora Curry

Servings: 4

INGREDIENTS:
Thondekai / Dhondakai / Tindora: 2 lb
Chopped onions: 2tbs 
Coriander leaves for Garnish
Water:1 1/2 cup


Seasoning:
Mustard seeds: 1/2 tsp
Jeera: 1/2 tsp
Curry leaves: 8 leaves
Asifotida: 1 pinch


For Masala:
Roasted Peanut: 1/4 cup
Coconut: 1/4 cup
Ginger Garlic paste: 1/2 tsp
Tamarind: 1/4 tsp
Red chillies: 4 to 5
Dania Powder: 1/2 tsp
Jeera Powder: 1/2 tsp
Chopped onions: 2tbs
Curry leaves: 8 leaves
Salt: 1/2 tsp

Method:

Grind the all masala ingredients with 1/2 cup of water
Cut Tindora / Thondekai / Dondakai twice to fill masala(like stuffed brinjal).

Take a pan and prepare seasoning with mustard seeds, jeera, curry leaves. now add Chopped onions and Tindora / Thondekai / Dondakai and fry until Tindora / Thondekai / Dondakai gets little tender now add the ground masala n cook for 10 to 12 min.

Pour the curry into a serving dish and garnish with coriander leaves.
Ridge guard curry is ready to serve with Chapathi or Jower rotti or rice

Lemon Rice


Ingredients:
Sona Masoori/Basmathi Rice  - 1cup
Lemon - 1
Chopped Coriander - 2tbs
Grated Coconut - 2tbs



Seasoning:
Mustard seeds - 1 tsp
Jerra - 1tsp
curry leaves - 6
Oil - 2tbs
Urad dal - 1tsp
Chana Dal -1tsp
Peanut - 2tbs
Cashew nuts - 2tbs
Chopped Onion - 1/2 cup
Turmeric powder - 1/4tsp

Powder:
Til - 2tsp
Garlic - 2
Green Chillies - 2


Method:
Soak Rice for an hour and pressure cook with 2 cups of water or as required.
Make powder using til, garlic and green chillies.
Prepare seasoning, once mustard seed starts sputtering add urad dal,  Chana Dal, Peanut and Cashew nuts when they start getting slight brown add onion,  when onion gets translucent add ground powder, turmeric powder and keep frying until the raw garlic smell gets tender, now reduce the heat and add cooked Rice, salt and lemon, keep mixing until Rice is well coated with seasoning.
Garnish with chopped coriander and grated coconut.

Cauliflower Pickle

Ingredients:
Chopped Cauliflower - 3cup
Turmeric Powder - 1tsp
Red Chili Powder - 1 cup
Roasted Mustard Seed Powder - 1tsp
Roasted Methi Seed Powder - 1tsp
Salt -1 cup
Tamarind Paste - 1 cup

Seasoning:
Mustard seeds:1/2 tsp
Cumin / Jeera - 1/2 tsp
Curry leaves: 6
Chana dal - 2tsp
Red chili - 5
garlic - 10 cloves
Asifotida
Oil: 1cup

Method:
Prepare seasoning and keep it aside and let it cool

Cut cauliflower by hand or by using knife.
Mix chili powder, tamarind paste, salt, Mustard Seed Powder, Methi Seed Powde, turmeric powder to chopped Cauliflower then add seasoning.  let it settle for a day, 

Serve with Rice.
This Cauliflower Pickle can be stored for few weeks.

 Method to prepare Tamarind paste:
Take out the pulp by squeezing soaked tamarind.  then boil it until it gets thick.  around 15 to 20 min.

Cabbage Chutney

Ingredients:
Chopped Cabbage - 1 cup
Green chillies - 2
tamarind - one pinch
Garlic -2
Curry leaves - 1 stick
salt to taste
Oil - 1tsp

Seasoning:
Mustard seeds:1/2 tsp
Jeera: 1/2 tsp
Curry leaves: 6
Urad dal - 1tsp
Red Chillies: 6
oil: 2 tbs

Method:
Fry Cabbage, garlic, green chillies and salt using oil.
when it get cool add all remaining ingredients and grind it without adding water,
add seasoning before serving.

Stuffed Tindora / Thondekai / Dondakai Rice

Serving: 4

Ingredients:

Tindora / Thondekai / Dondakai: 1lb
Sona Masoori Rice: 2 cup

Masala Powder:
Channa dal: 1tsp
Urad dal: 1/2 tsp
Dhaniya: 1tsp
Jeera: 1/2tsp
Cinnamon: 1/4"
Clove: 2
Coconut: 5tsp
Red chilies: 2
Sambar Powder: 1 1/2tsp
Chopped coriander: 5tsp
Turmaric powder: 1/4 tsp
Salt

Seasoning:
Mustard seeds:1/2 tsp
Jeera: 1/2 tsp
Curry leaves: 6
Ashifotida: one pinch
Oil: 2 tbs

Method:

Take a pan and dry fry Channa dal, urad dal, cinnamon, clove, dhaniya, red chilies, jeera, coconut. Make powder with above roasted ingredients with salt and sambar powder.


Cut Tindora / Thondekai / Dondakai twice to fill masala(like stuffed brinjal). Fill masala in each Tindora / Thondekai / Dondakai(use half masala powder)

In a pressure cooker prepare seasoning add washed rice and 5 cups of water. when the rice starts boiling add remaining masala powder and keep all stuffed Tindora / Thondekai / Dondakai horizontally, close the lid and pressure cook the rice.



When the cooked gets cool transfer the rice to a serving dish and garnish with chopped coriander.
